Description
Single grain Port Dundas, picked by Signatory Vintage, a 25 year old grain, from 1991, drawn from cask 50403 and bottled at 60.6%. A small release of 258 bottles. The Glasgow grain distillery Port Dundas, established in 1811 on the Glasgow canal, was a landmark Glasgow grain works until closed and cleared after 2010. It stood on the highest ground in the city, its chimney visible for miles.
Made on wheat and malted barley and drawn off tall continuous column stills, this is a clean grain spirit with little weight of its own. Matured in a refill ex-Bourbon cask, letting the clean grain character speak. Two decades and more carry the grain into a deep, rounded maturity, concentrated and waxy. Long, cool warehouse ageing lets cask and spirit knit slowly rather than forcing the flavour.
At a natural 60.6% it is bold and full. Lignin breakdown lends vanilla and a coconut note from the lactones, with a toffee, dessert like sweetness, over a base of light citrus and tropical fruit. A faint waxy note gives it weight on the tongue. The close is soft, oily and warm. This is a relic of the city's great grain distilling age.
