Champagne Palmer & Co makes this Brut Réserve from Premier and Grand Cru vineyards on the Montagne de Reims, blending Chardonnay, Pinot Noir and Pinot Meunier. The house leans on a high proportion of reserve wines from up to ten earlier vintages, which is the source of the cuvée's depth and consistency. Made by the traditional method, the wine sees a second fermentation in bottle followed by an average of four years on the lees, and that extended autolysis builds the brioche and biscuit character alongside a fine, sustained bead. The dosage is set in the Brut range, so the wine finishes dry.
The colour is a bright golden yellow with a lively perlage. The nose shows ripe apple, yellow fruit and citrus zest, framed by fresh brioche from the lees. The palate is full and clearly structured, balancing fruit, a creamy texture and a precise, dry finish. Serve chilled at 6 to 8 degrees in a white wine glass to let the autolytic notes show. It makes a natural aperitif and pairs with crab and lobster, fine white fish or poultry.
