    A Dominican solera-style ron carrying a 17 marker on the label, sweet and warming with caramel, raisin, brown sugar and tobacco over a vanilla-and-burnt-sugar finish, a gentle 40% sipper that is sweet but not overwhelmingly so.

    Ophyum 17 Solera is a Dominican ron made by the solera method, a fractional-blending system borrowed from sherry in which the oldest barrels are never fully emptied and each bottling is mostly young rum carrying a thread of older spirit. The 17 on the label points to the oldest component in that system rather than an age for the liquid, so this is best read as a solera blend, not a seventeen-year rum. The base is molasses, distilled on a column still in the soft Spanish style.

    In the glass it shows caramel, raisin and a candied, lightly spirity nose, with a palate of brown sugar, wood and tobacco and a finish of vanilla, gentle warmth and burnt sugar with a small bitter edge. It is sweet but stops short of cloying, with a touch of sharpness and spice keeping it lively. The result is a solid, warming everyday sipper that leans into the rounded, sugar-kissed Dominican template.
