Description
Monte Coyote Tobala is a joven mezcal built around Tobala, Agave potatorum, a small wild maguey often called the king of mezcals for its delicacy and slow growth. It is made by hand in small batches in Oaxaca, the agave grown for eight to nine years in the region of Santa Maria Suchixtlan before harvest.
The piñas are roasted in a conical volcanic stone oven fired with oak and pine, the source of both the cooked agave sweetness and a restrained smoke, then fermented in fine pinewood vats and distilled in a wood fired copper still. Tobala shows its character through wildflower and herbal aromas with a touch of tropical fruit, leading to ripe mango, sweet agave and a soft earthy spice on the palate. The finish carries smoked wood and citrus peel, bottled at 40%.
