Description
Monte Coyote is an artesanal joven mezcal from Oaxaca, made from mature Espadin, Agave angustifolia, of ten to twelve years selected in the town of Santa Maria Suchixtlan by Mezcalero Maestro Antonio Gallindo. It is deliberately built to avoid heavy smoky top notes, leaning instead on citrus and floral expression.
Each agave is quartered and roasted in a conical underground stone oven over a wood fire, the stage that lends the light smoke, then crushed and pressed for its sweet juice. Fermentation rests and ferments in a pine vat for seven to ten days, monitored by ear, eye and taste, before a double distillation in a fire heated copper still where the maestro shapes the final character by hand. The nose shows intense citrus and floral aromas, soft and velvety with light smoke, while rosemary and oregano lead to a finish of lactic tang, ripe banana, cooked agave, yeast and sweet woods at 40 percent.
