Description
Moillard-Grivot makes this Crémant de Bourgogne from Chardonnay in Burgundy, using the same traditional method as Champagne. A still base wine undergoes a second fermentation in bottle, then matures on the lees, and it is this autolysis that gives the wine its hazelnut and almond depth alongside a fine, sustained bead. Working with a single variety keeps the style clear and elegant, with Chardonnay bringing white flowers, orchard fruit and a mineral thread. Dosage sits in the Brut range, so the finish reads dry.
The colour is a light lemon yellow with a fine bead. The nose shows white flowers, ripe peach and delicate hazelnut and almond. The palate is lightly buttery, smooth and full, rounded off by refreshing acidity and a long finish. Serve well chilled at 6 to 8 degrees in a white wine glass to let the nutty character show. It carries from aperitif to dessert and pairs with white fish, shellfish and hard nutty cheese.
