Description
Cattin are a long-established grower and house in Alsace, and this rosé Crémant is made by the traditional method, the same bottle-fermented process used in Champagne. In Alsace, rosé Crémant must be made entirely from Pinot Noir, which gives the wine its pink colour and its red-fruited character. After the second fermentation the wine rests on its lees, building a light bready complexity beneath the fruit, and it is finished at brut dosage for a dry style.
The colour is a bright salmon pink with a fine, persistent bead. The nose leads with strawberry, raspberry and red currant, backed by a little cherry and a soft toasted-bread note from time on the lees. The palate is dry and fresh, the red fruit carried by a fine mousse and a clean, floral-edged finish. Serve at around six to eight degrees in a tulip glass. It makes a fine aperitif and suits charcuterie, roast poultry and red-fruit desserts.
