Elixir Distillers is the bottling arm of The Whisky Exchange, founded by Sukhinder and Rajbir Singh and now operating Portintruan Distillery on Islay. The Single Malts of Scotland range is the firm's flagship indie programme, presenting bottlings under direct cask reference or vatted selections. This Glenrothes 31 Years Old, bottled at 53.2% from refill bourbon casks, runs to 560 bottles released globally.
Thirty one years of refill bourbon ageing produces a profile fundamentally led by distillery character. The cask's first fill activity exhausted under previous tenancy, the wood contributes through accumulated secondary chemistry alone: lignin's slow breakdown continues to deliver syringaldehyde and vanillin at attenuated levels, lactones produce coconut and creamy oak through cumulative contact, and ellagitannins build structure gradually. The cask's old wood signature emerges from the deep tertiary chemistry of long maturation.
On the nose, old wood resin sits with dried fruit and honey, a faint plastic note signalling the spirit's accumulated polymer chemistry from extended cask contact. The palate moves through fig, raisin and a clean vanilla pod note, with 53.2% strength delivering the cask's accumulated character without harshness. The finish is long and softly drying, the cask's diminished tannin signature leaving the spirit's preserved character clearly framed.
