    Cask 6980 sits in the same Signatory release as cask 6979 and others from the 1995 Glenrothes vintage, all curated by founder Andrew Symington for the Cask Strength Collection's Symington's Choice tier. Signatory Vintage acquired the Edradour distillery in 2002 and now warehouses much of its independent stock there, including this 30 Years Old butt. The cask yielded 499 bottles at 54.4%, released into the European market.

    Thirty years in a single Oloroso butt builds a deep oxidative profile through accumulated cask interaction. The hemicellulose breakdown that produces furfural and hydroxymethylfurfural reaches its longest run, while lignin's slow degradation lays down syringaldehyde and vanillin. European oak's ellagitannin content tightens the structure as the years compound, and the residual Oloroso sherry that seasoned the butt contributes oxidised glucose and aldehyde chemistry. At 54.4%, the cask runs slightly softer than first fill 30 year sherry releases at higher abv.

    On the nose, fig and prune sit with walnut shell, polished oak and a citric edge that distinguishes this cask from its siblings. The palate carries dried fruit and dark chocolate, with rancio depth pressing through alongside an unexpected lemon zest lift from preserved spirit acidity. The finish runs long and tannic, with European oak's grip holding the spirit's sweetness in tight control.
