    Glenrothes was founded in 1879 in the Speyside village of Rothes by James Stuart and a consortium of local merchants. Now owned by The Edrington Group, the distillery has built its reputation on single malts matured in sherry casks, drawing on longstanding ties with bodegas in Jerez. This 30 Years Old release sits within Signatory Vintage's Cask Strength Collection, a range bottled at natural strength from individual casks and curated by founder Andrew Symington. Symington's Choice marks bottlings the founder personally selected from Signatory's warehousing at Edradour, where stocks have been laid down for extended maturation since the late 1980s.

    Three decades in cask 6979, a first fill Oloroso butt, produce a deep oxidative profile. The butt arrived seasoned with Oloroso sherry, carrying esters and oxidised sugars accumulated during open air solera ageing in Jerez. Across thirty years in European oak, hemicellulose breaks down into furfural and hydroxymethylfurfural, the precursors to caramelised and dried fig notes; lignin slowly degrades into syringaldehyde, layering clove and dark spice into the spirit. The longer extraction window in Quercus robur draws more tannin than American oak would, balancing the residual sweetness with structure.

    The nose carries dense raisin and fig alongside walnut shell and aged leather, the latter signalling sotolon development from prolonged sherry exposure. The palate moves into Christmas cake territory, with rancio creeping in beneath: bitter cocoa, polished oak, and a vegetal saline note from extended cask interaction. The finish runs long and resinous, the tannin grip holding the spirit's natural Speyside fruit in check rather than overwhelming it.
