Description
North Star Spirits operates a numbered Cask Series programme that groups individual distillery releases under sequential identifiers, with each series number marking a release window across the firm's working inventory. The Glasgow based bottler has operated since 2016 under Iain Croucher's direction, presenting bottles at natural strength with transparent cask provenance. This Glenrothes 12 Years Old, distilled in 2008 and bottled in 2020 at 62.2%, runs to 323 bottles within Cask Series 012 for European markets.
Twelve years in Oloroso casks at sustained 62.2% delivers concentrated cask interaction in the productive middle window. The casks sat in lower humidity warehousing favouring water rather than alcohol evaporation, keeping the spirit at high strength. European oak's tannin contribution accumulates at productive levels, while the residual oxidised sherry combines with lignin's vanillin and syringaldehyde extractions. Hemicellulose breakdown produces furfural and the early stages of caramelised sugar chemistry.
On the nose, dried fruit dominates with polished oak underneath, the casks' first fill sherry signature clearly forward. The palate runs concentrated at 62.2%: fig, raisin and a developing rancio depth, with European oak tannins emerging mid palate. Cocoa nib bitterness threads through alongside the cask's residual sweetness. The finish runs long and tannic, the cask's full extractive load pressing through without softening the spirit's Speyside character beneath.
