Description
Signatory Vintage, the Edinburgh house that bottles at Edradour above Pitlochry, bottled this Glendullan, distilled in 2007, from cask 319299 + 319309, at 46%. Glendullan is a fresh, grassy Speyside malt of orchard fruit and a malty sweetness. Its founder also struck an exclusive supply deal with neighbouring Glenfiddich. It sits on the banks of the River Fiddich, in the heart of Speyside. It runs long fermentations and a slow distillation for a green, grassy, lightly fruity spirit.
Worked unhurried through the stillhouse, giving a fresh, lightly fruity Speyside spirit. It rested in ex-Bourbon oak, oak lactones lending a creamy vanilla. Through integration spirit and wood marry, vanillin rounding out as esters lend a riper orchard and tropical fruit. The fresh, fruity spirit deepens with time, the cask drawing out a soft honey. A light, clean texture from the spirit carries through the maturation.
At 46% it is smooth and fruity. Green apple, pear and a light grass, lifted by a soft oak. The body is light and fresh, the fruit lifted by a soft oak. A fresh finish closes on pear and a soft oak. This is a clean, fruity Speyside single malt.
