This official GlenAllachie, a 16 year old, from 2006, cask 1408, at 59.8%, 699 bottles in all. GlenAllachie is a rich, sherried Speyside malt from Aberlour, built on full bodied spirit and active casks. It runs unusually long fermentations, up to a hundred and sixty hours, for a thick, ester rich and fruity spirit. It matures its spirit in sixteen dunnage warehouses on the distillery site at Aberlour.

Distilled to a full, generous cut, giving a full bodied Speyside spirit. It was matured in an Oloroso cask, the wood working deep into the malt. Through oxidative maturity the esters concentrate, the orchard notes turning to raisin, fig and a dark chocolate. The casks are picked closely, the wood matched to the rich GlenAllachie make. The wood frames the spirit without ever stripping the full Speyside body. Active first fill wood drives the maturation, the cask deep in the malt.

At 59.8%, undiluted, it is dark and full. Fig, walnut and a bittersweet chocolate, with dried fruit, fig and walnut from the cask. The mouthfeel is full and coating, the fruit dark and sweet. A long finish carries raisin, chocolate and a treacle. This is a deep, sherried Speyside single malt.
