Description
A distillery release of GlenAllachie, a 15 year old, from 2007, cask 800467, at 58.3%, 730 bottles in all. GlenAllachie is a Speyside single malt, revived in 2017 by the team of Billy Walker. Its water is the Lochnagar Burn, drawn down from the slopes of Ben Rinnes. It was founded in 1967, designed by the architect William Delme Evans, his fourth distillery after Jura and Tullibardine.
The spirit was distilled to a full, generous cut, building a deep malt of dried fruit and dark sugar. A Pedro Ximenez cask held it, drawing the rich spirit on over the years. At oxidative maturity aldehydes lend a nutty edge while ellagitannins draw a drying, structured grip across the fruit. Years in oak deepen the spirit to a darker gold, the body growing rounder and more resinous with time. Vanillin and oak lactones from the wood lend vanilla and a soft coconut over the fruit.
At a natural 58.3% it is full and rich. Date, fig and a warm cinnamon, with raisin, date and treacle from the cask. The body is full and rich, the fruit deep and dark. It finishes long, full and fruity. This is a Speyside single malt of real standing.
