A 12 year old GlenAllachie from the distillery, at 58.6%. Deep and dark, all baked apple, honey and a chocolate, with dried fruit, fig and walnut from the cask. Built by Mackinlay McPherson, the firm that supplied Shackleton’s 1907 expedition. It runs very long fermentations for a thick, fruity, ester rich spirit. This is a rich Speyside malt of dried fruit and chocolate.

Description
This official GlenAllachie, a 12 year old, from 2011, cask 807032, at 58.6%, 709 bottles in all. GlenAllachie is a rich, sherried Speyside malt from Aberlour, built on full bodied spirit and active casks. It was built by Mackinlay McPherson, the firm that supplied whisky to Shackleton's 1907 expedition. It was founded in 1967, designed by the architect William Delme Evans, his fourth distillery after Jura and Tullibardine. Its stills were doubled from two to four within months of opening, the lyne arms angled down for a fuller spirit.
The spirit was worked unhurried through the stillhouse, giving a full bodied Speyside spirit. It was fully matured in an Oloroso cask, the wood deep in the rich spirit. In integration coconut and vanilla knit with the malt, the orchard notes deepening to sultana, date and chocolate. The wood frames the spirit without ever stripping the full Speyside body.
Bottled at a cask strength 58.6%, it is deep and concentrated. A deep, dark sweetness, with dried fruit, fig and walnut from the cask. Dried fruit and a treacle sit behind the spice. The finish runs long, full and warming. This is a full bodied Speyside single malt of real richness.
