Its four stills carry downward angled lyne arms for a fuller spirit. Built by Mackinlay McPherson, the firm that supplied Shackleton’s 1907 expedition. Description
An 11 year old GlenAllachie, a distillery bottling, from 2008, cask 3600, at 56.6%, 301 bottles in all. GlenAllachie is a deep, dark Speyside malt of dried fruit, chocolate and spice. Its water is the Lochnagar Burn, drawn down from the slopes of Ben Rinnes. It was mothballed in 1985 and reopened in 1989, a modern distillery by Speyside standards. It was bought in 2017 by Billy Walker and two partners, fresh from selling BenRiach, GlenDronach and Glenglassaugh.
Taken gently through wash and spirit stills, for a full make built to take active wood. It was matured in a Sauternes cask, the wood working deep into the malt. By the integrating teens the raw notes fade and esters build, the rich spirit growing rounder and darker. Active first fill wood drives the maturation, the cask deep in the malt. The wood frames the spirit without ever stripping the full Speyside body.
At its natural 56.6% it is rich and chewy. A deep, dark sweetness, with honeyed apricot and a candied citrus from the cask. The body is full and rich, the fruit deep and dark. A deep finish ends on dried fruit and a dark chocolate. This is GlenAllachie's deep, fruity Speyside style.
