    Douglas Laing, the Glasgow family bottler, bottled this GlenAllachie, a 38 year old, at 50%. Raisin, chocolate and a dark spice fill the glass, with dried fruit, fig and walnut from the cask. Water comes from the Lochnagar Burn off the slopes of Ben Rinnes. This is a rich Speyside malt of dried fruit and chocolate.

    Chosen by Douglas Laing, the Glasgow family bottler, this a 38 year old GlenAllachie, distilled in 1972, from cask DL 6880, at 50%, one of 302 bottles. GlenAllachie is a Speyside single malt, long a blending malt and now a sherry led name in its own right. It was bought in 2017 by Billy Walker and two partners, fresh from selling BenRiach, GlenDronach and Glenglassaugh.

    The spirit was distilled to a full, generous cut, for a thick, ester rich spirit the casks then deepen. Maturation came in an Oloroso cask, layered over the full GlenAllachie make. In its ethereal years the malt turns waxy and oxidative, faded esters and a whisper of sotolon over dark fruit. Years in oak deepen the spirit to a darker gold, the body growing rounder and more resinous with time. The wood frames the spirit without ever stripping the full Speyside body.

    Bottled at a cask strength 50%, it is deep and concentrated. Fig, walnut and a bittersweet chocolate, with dried fruit, fig and walnut from the cask. It is full and fruity, the spirit carrying the cask. It finishes long, full and fruity. This is GlenAllachie's deep, fruity Speyside style.
