Fine Spirits released this 2016 Worthy Park as a single cask for its Rum of the World line, aged five years in ex-bourbon and bottled at cask strength 57.18%. Worthy Park is a single-estate St. Catherine distillery whose pot still rums are clean and precise, and this young, full-proof release shows the house fruit alongside a firmer oak influence.
Distilled from molasses and aged five years, it noses on citrus, dried fruit, a medicinal note and floral lift, the nose initially reserved and alcoholic before opening with time. The palate brings dried fruit, allspice, wood and citrus, fuller than the nose suggests, the finish turning to cocoa, pineapple, milk chocolate and coconut. At 57.18% it is firm and benefits from rest in the glass. Unsweetened and bottled from a single barrel, this is a young, oak-framed Worthy Park for drinkers who want the distillery's clean character at cask strength, with a chocolate-and-coconut finish rewarding patience even where the nose holds back.
