Description
Fidencio Clásico is a joven mezcal from Santiago Matatlán, Oaxaca, made entirely from Espadín harvested only after ten to twelve years and produced by maestro mezcalero Enrique Jiménez. The Jiménez family has made mezcal here for over a century, since founder Fidencio Jiménez settled in Matatlán, working through four generations with knowledge passed down at the Fábrica de Amigo del Mezcal palenque.
A fourteen tonne oven roasts the agave for five days fired only with black oak, the fermentation runs on native yeast and is turned every two days, and the spirit is twice distilled in copper and bottled undiluted, the whole process taking one to two weeks with the weather. The nose is lightly sweet with charcoal, tobacco, tar, pine and baked orchard fruit, the palate delicate with wood smoke, green pepper, bright red fruit and roasted agave, closing full and honeyed at 47.3%.
