Description
Fidencio Tepeztate is a single agave Oaxacan mezcal made entirely from wild Tepeztate, Agave marmorata, harvested near Santa Maria Zoquitlan after as long as thirty years in rocky, mineral rich ground. It is the work of maestro Enrique Jiménez in Santiago Matatlan, where the Jiménez family has distilled for over a century, and the slow growing agave gives a spirit known for its bold, herbaceous spice.
The agave is roasted in an earthen pit over volcanic rock and black oak, crushed on a tahona, then wild fermented in pine vats and twice distilled in copper alembics. Bottled unaged at 48.8%, it is dry and complex, with grilled apricot, dried plum and candied fruit over campfire ash and a smoky, herbal finish that mirrors the terroir the marmorata pulls from its soil.
