Description
This official Fettercairn, a 12 year old, from 2009, at 48.5%, 6000 bottles in all. Fettercairn is a Highland single malt shaped by the unique cooling rings on its stills. Its water comes from springs in the Grampian and Cairngorm mountains above the distillery.
It was distilled slow and light for the tropical Fettercairn style, building the tropical Fettercairn style. Maturation came in ex-Bourbon wood, the oak quiet behind the fruity spirit. Through integration spirit and wood marry, vanillin settling into a rounded vanilla as ethyl esters lend a riper pineapple and pear. The cooling rings give a light spirit, so the cask brings depth over the years. Its make matures on site in dunnage warehouses, around thirty two thousand casks in all. The light, fruity make takes cask flavour well while keeping its pineapple and citrus. The cool Highland air of the Mearns gives a slow, even maturation in the dunnage warehouses.
Bottled at a cask strength 48.5%, it is rich. Pineapple, mango and a gentle honey, with a soft vanilla from the oak. A baked pineapple and a gentle spice lift it. The close is light and warming, fruit over a gentle oak. This is Fettercairn's pineapple led Highland style.
