From the Alistair Walker Whisky Company, a 14 year old Fettercairn, distilled in 2007, from cask 1823, bottled at 55.2%, one of 622 bottles. Fettercairn is a Highland single malt from Whyte and Mackay, known for pineapple and tropical fruit. Its stills carry unique cooling rings, copper tubes that drench them in cold mountain water.

It was drawn off the stills, the cooling rings raising reflux for a fruity spirit, the cooling rings lifting a clean, tropical character. Finished in an Oloroso cask, the wood building over the fruity, light spirit. Through integration spirit and wood marry, vanillin settling into a rounded vanilla as ethyl esters lend a riper pineapple and pear. The clean, fruity spirit shows the cask clearly, vanilla and fruit to the fore. It was the second distillery licensed in Scotland after the Excise Act of 1823. A gentle maturation suits the light make, the tropical fruit growing richer with time.

At cask strength 55.2% it is full bodied. A clean, fruity sweetness, with dried fruit, fig and walnut from the cask. A baked pineapple and a gentle spice lift it. The finish runs long, tropical and warming. This is a tropical Highland malt from the foot of the mountains.
