A 12 year old Fettercairn from the distillery, at 40%. Soft tropical fruit and a gentle honey. Its stills carry unique cooling rings that drench them in cold mountain water. Fettercairn is a Highland malt from the foot of the Cairngorms in Aberdeenshire. Water comes from springs in the Grampian mountains above the distillery. This is Fettercairn’s pineapple led Highland style.

Description
A 12 year old Fettercairn, a distillery bottling, at 40%. Fettercairn is a Highland malt of pineapple and citrus, distilled at the foot of the mountains. Its make matures on site in dunnage warehouses, around thirty two thousand casks in all.
The spirit was worked through the cooling ring stills for a clean, fruity make, the cooling rings lifting a clean, tropical character. A refill bourbon hogshead held it, keeping the light, tropical character to the fore. Integration folds eugenol (clove) and vanillin (vanilla) into the fruit, the body softer and fuller. Maturation on site in the Fettercairn dunnage warehouses is slow and steady. Years in oak round the spirit, the pineapple and citrus deepening to a mango. It uses unpeated malt and matures mostly in American oak ex-Bourbon casks. Active wood frames the fruit without overwhelming the light Highland spirit.
At an approachable 40% it is light and tropical. A bright, tropical orchard fruit, with a soft vanilla from the oak. The texture is light and clean, the fruit lifted by vanilla. Citrus, fruit and a soft oak see out the finish. This is a Highland single malt of real character.
