Water comes from the Bailliemullich Burn on the banks of the Spey. Founded in 1852, it was the first distillery to use the pagoda roof. Single malt Dailuaine is rare, so most come from independents. Excalibur 1973 MBl (Meadowside Blending) is a blended Scotch from Meadowside Blending. It marries malt and grain whiskies, with Speyside malt such as Dailuaine for a honeyed core. Water comes from the Bailliemullich Burn, the spirit drawn off three wash and three spirit stills.
Dailuaine's smooth, sweet malt is the kind that built Johnnie Walker. A Pedro Ximenez cask added raisin, date and a treacle sweetness. The full bodied make rewards a long, patient maturation in good wood. The big stills give a heavy spirit that takes a long, sherried maturation in its stride. A fire in 1917 destroyed the maltings, and the distillery was rebuilt soon after. Vanillin and oak lactones from the wood lend vanilla and coconut over the meaty malt. Its rich, robust malt has long been a backbone of the Johnnie Walker blends. The clean spirit shows the cask clearly, vanilla and fruit over a rich malt.
At 40.3% it is clean and soft. Soft orchard fruit, honey and a gentle spice run through it, smooth and approachable. Soft orchard fruit and a rich malt sit behind the cask. It finishes robust, malty and warm. A characterful blended Scotch.
