    White pepper, creamy lemon and wet stone run through this El Gran Legado de Vida blanco, made at the Cascahuin distillery from Michoacan agave, steam cooked three days in stone ovens and twice distilled.

    El Gran Legado de Vida is a tequila blanco produced at the Cascahuin distillery, NOM 1123, in El Arenal in the Jalisco lowlands, using ripe blue Weber agave grown in the state of Michoacan, one of the five tequila DO states. Bottled unaged, it shows the cooked agave and the distillery's hand directly, with mineral and herbal lowland character.
    The agave is steam cooked for three days in traditional stone ovens, cooled a further day, then crushed in the distillery's roller mill. Fermentation runs open air in stainless tanks before a double distillation, the first in a stainless still with a copper coil and the second in a copper pot, reaching 55% before it is reduced with deep well water and rested 15 to 30 days. The nose offers floral notes, cooked agave, stone fruit, pineapple, bright lemon peel, minerality and mint, while the palate is full yet gentle with white pepper, creamy lemon, sweet agave, black pepper and wet stone, finishing soft and fruity.
