Founded in 2016, it sits in an old fire station beside Dornoch Castle. Dornoch is one of the smallest distilleries in Scotland, run by Phil and Simon Thompson. Dornoch from the distillery, a 6 year old, from 2018, cask 123, at 55.1%, 135 bottles in all. Dornoch is a Highland single malt built on heritage barley, brewer's yeast and long ferments. It was founded in 2016 by Phil and Simon Thompson, funded by more than two hundred backers.
The spirit was fermented long and distilled slow for an oily, fruity spirit, for the oily, fruity make Dornoch is known for. An ex-Bourbon hogshead held it, keeping the spirit character to the fore. Extractive and young, oak lactones give coconut and vanillin a vanilla, the brewer's yeast leaving a savoury, oily depth. Maturing in insulated containers on site, the young spirit develops fast and full. The long, slow ferment and old yeast strains build a fruity, oily character. Heritage barley and a long ferment give a make with flavour to spare while young. The ex-Bourbon oak frames the rich make without hiding the heritage barley.
At 55.1%, undiluted, it is deep and fruity. Baked apple, oil and a creamy malt, with a soft vanilla from the oak. Beneath it run green apple, pear and an oily malt. A long finish carries a green apple and a malty oil. This is Dornoch, the tiny distillery by the castle.
