Dornoch is one of the smallest distilleries in Scotland, run by Phil and Simon Thompson. Matured in insulated containers on site and bottled at natural colour. Description
A 4 year old Dornoch, a distillery bottling, from 2018, cask 115, at 57.7%, 89 bottles in all. Dornoch is a Highland single malt made by the Thompson Brothers from heritage barley and old style methods. The spirit is condensed in shell and tube condensers and matured in insulated containers on site.
Made from organic Plumage Archer barley and a long brewer's yeast ferment, for the oily, fruity make Dornoch is known for. A first fill ex-Bourbon cask held it, oak lactones lending vanilla and coconut. At an extractive age eugenol lends a clove note and lactones a coconut, the spirit thick, oily and fruit driven. Bottled at cask strength and natural colour, the full oily body is kept in the glass. It sits in a restored 1880s fire station beside Dornoch Castle in Sutherland. Only organic, heritage barley goes into the make, milled and mashed in a small mash tun.
Bottled at a cask strength 57.7%, it is rich and thick. An oily, malty richness, with a soft vanilla from the oak. It is rich and oily, the heritage barley shining through. A rich finish ends on apple and a soft oak. This is the oily, fruity malt of Dornoch.
