Description
The Dingle Distillery sits on the wild south-west coast of Ireland, founded in 2012 as one of the first independent Irish distilleries in generations. Its Original Gin reaches into the local hedgerow and bog for its character: rowan berries, fuchsia, bog myrtle, hawthorn, heather, angelica and coriander are macerated for a full 24 hours, then gently distilled and cut to strength with spring water drawn from beneath the distillery.
The nose is traditional, fresh and floral, the moorland botanicals lending an unmistakable sense of place. The palate is led by juniper and green herbs, layered and faintly wild. The finish runs long. A G&T with a light tonic and a sprig of rosemary suits it, letting the foraged florals come forward.
