Description
Deutz are based at Ay, in the heart of Champagne, and their Classic Brut is the non-vintage house blend built from Pinot Noir, Chardonnay and Pinot Meunier drawn across several villages. It is made by the traditional method, with the second fermentation in bottle and a rest on the lees that develops the bready, biscuity autolytic character alongside the fruit. The dosage is set at brut, giving a dry, balanced style that reflects the elegant, understated house signature.
The colour is a pale gold with a fine, persistent bead. The nose shows apple, pear and white peach lifting into toasted bread and biscuit. The palate is dry and finely mousy, the orchard fruit framed by a citrus-peel freshness and a clean, savoury finish. Serve at around eight to ten degrees in a white-wine glass or tulip. It makes a refined aperitif and pairs with oysters, grilled fish and hard cheeses.
