Description
Desiderio produce this rosé spumante in Italy as a prestige cuvee, a sparkling wine built around red and white grapes such as Pinot Nero and Chardonnay. The colour and red-fruit character come from the Pinot Nero, and the bubble is developed in the tank method, which sets the fizz in pressurised stainless steel to keep the wine fresh, primary and fruit-led rather than adding lees or oak weight. It is finished at brut dosage, so the style stays dry.
The colour is a bright rose pink with a fine, lively bead. The nose leads with strawberry and raspberry, backed by red currant, a little cherry and a floral lift. The palate is dry and light, the red fruit carried by a fresh acidity and a clean, citrus-tinged finish. Serve well chilled at around six to eight degrees in a tulip glass. It makes a relaxed aperitif and suits charcuterie, roast poultry and lighter red-fruit desserts.
