Description
Desiderio make this Prosecco Rosé from the Treviso DOC in the Veneto, one of the newer styles permitted under the Prosecco rules, which allow Glera to be blended with a portion of Pinot Nero to give a pink, red-fruited version. Both the fruit and the fizz are protected by the tank method, a second fermentation in pressurised stainless steel that keeps Prosecco light, fresh and aromatic. This is a millesimato, made from a single vintage, and finished at brut dosage for a dry style.
The colour is a pale rose pink with a fine, foaming bead. The nose brings strawberry, raspberry and red currant together with apple and a floral lift. The palate is light and dry, the red fruit joined by pear and a crisp, clean finish. Serve cold at around six to eight degrees in a white-wine glass or flute. It makes a bright aperitif and pairs with antipasti, prosciutto and lighter salads.
