Description
Meadowside Blending bottled this Deanston, a 21 year old, distilled in 1995, from cask 3325, bottled at 53.2%, one of 581 bottles. Deanston is a bright, fruity Highland single malt distilled in a Victorian mill at Doune. The site was the Adelphi cotton mill, built in 1785 by Sir Richard Arkwright and turned to whisky in 1965.
Run through the bulbous stills with their upward sloping lyne arms, giving the soft, malty Highland spirit. It was matured in an Oloroso cask, the wood working slowly into the waxy malt. Into oxidative maturity, slow air ingress builds fruity ethyl esters (apple and pear) and a honeyed depth over the wax. Active wood frames the fruit without overwhelming the soft Highland spirit. Years in oak round the spirit, the green apple and honey deepening over the wax. It runs an open top mash tun, two wash and two spirit stills of a bulbous shape.
At cask strength 53.2% it is full bodied. Green apple, honey and a waxy malt, with dried fruit, fig and walnut from the cask. A baked apple and a gentle clove lift it. The finish runs long, fruity and warming. This is Deanston's waxy, fruity Highland style.
