Description
The Highland bottler Adelphi bottled this Deanston, a 10 year old, distilled in 2013, from cask 7403, bottled at 58.2%, one of 239 bottles. Deanston is a Highland single malt, unchillfiltered and made from Scottish barley near Stirling. It runs an open top mash tun, two wash and two spirit stills of a bulbous shape.
Distilled slowly for a clean, fruity spirit, for the waxy, honeyed make Deanston is known for. First fill bourbon gave a fuller vanilla and a touch of coconut from the lactones. Integration folds eugenol (clove) and vanillin (vanilla) into the malt, the body softer and waxier. Vanillin and oak lactones from the wood lend vanilla and coconut over the fruit. Unchillfiltered and at natural colour, it keeps the full waxy body in the glass. The site was the Adelphi cotton mill, built in 1785 by Sir Richard Arkwright and turned to whisky in 1965.
At a natural 58.2% it is full and waxy. A fruity, waxy sweetness, with a soft vanilla from the oak. The mouthfeel is buttery and waxy, the fruit on a honeyed body. The finish is long, waxy and gently spiced. This is a fruity, unchillfiltered Highland single malt.
