An official Dalmore, a 17 year old, 2000, at 52%. Dried fruit, orange and a dark chocolate depth fill the glass. Much of its sherry comes from the aged Oloroso casks of Gonzalez Byass. Water comes from the River Averon, drawn from Loch Morie. Founded in 1839, it wears the twelve pointed Royal Stag of the Mackenzie clan. This is one of the Highlands’ most opulent single malts.

Dalmore from the distillery, a 17 year old, from 2000, at 52%, 264 bottles in all. Dalmore sits above the Cromarty Firth, its water jacketed stills building a thick, oily spirit. Its flat topped wash stills and water jacketed spirit stills build a thick, rich, oily spirit.
The spirit was drawn off stills whose cooling jackets build a rich, oily spirit, to build a rich, sherry loving character. Maturation came in ex-Bourbon wood, the oak quiet behind the thick spirit. Through oxidative maturity esters concentrate, the sherry turning to marmalade, treacle and dark chocolate. The water jacketed stills give a heavy spirit that soaks up sherry over a long maturation. Maturation in the cool north keeps the rich spirit balanced over the years. The cool Highland air on the firth gives a slow, even maturation. Years in oak round the spirit, the fruit deepening to chocolate, marmalade and treacle.
At its natural 52% it is concentrated. Baked fruit, coffee and a dark sweetness, with a soft vanilla from the oak. Beneath it run orange, dark chocolate and dried fruit. The finish is deep, sherried and dark. This is one of the Highlands' most opulent single malts.
