A 10 year old Dalmore from the bottler Scotch Malt Whisky Society, distilled in 2013, bottled at 60.1%, one of 237 bottles. Dalmore is the Highland malt of the Royal Stag, rich with orange, chocolate and sherry. Most expressions are finished in aged sherry wood, giving orange, chocolate and treacle.
Distilled in flat topped wash stills and water jacketed spirit stills on River Averon water, for the rich, full bodied make Dalmore is known for. A refill bourbon hogshead held it, keeping the rich character to the fore. By the integrating teens congeners fade and esters build, the rich, oily spirit growing rounder. The rich, oily spirit takes cask flavour superbly, especially aged sherry wood. The slow loss of the angel's share concentrates the rich, sherried core over the years. Its long time master distiller Richard Paterson, known as The Nose, shaped the rich house style.
At a hearty 60.1% it carries real weight. A rich, sherried sweetness, with a soft vanilla from the oak. A baked fruit and a warm spice lift it. A long, opulent finish carries a chocolate orange depth. This is the Royal Stag malt of the Cromarty Firth.
