Description
An 18 year old Dalmore, a distillery bottling, from 2000, at 52%, 642 bottles in all. Dalmore was founded in 1839 by Alexander Matheson and long run by the Mackenzies. Its flat topped wash stills and water jacketed spirit stills build a thick, rich, oily spirit.
The spirit was distilled in flat topped wash stills and water jacketed spirit stills on River Averon water, giving the thick, oily spirit that drinks sherry so well. An Oloroso hogshead lent dried fruit, walnut and a dark, treacly depth, soaked up by the heavy spirit. At oxidative maturity aldehydes and esters lend dried fruit while ellagitannins add a drying, tannic grip. The cool Highland air on the firth gives a slow, even maturation. Its spirit stills wear cooling water jackets, condensing the heavier compounds back for a fuller body. Water comes from the River Averon, drawn from Loch Morie in the hills above.
At a natural 52% it is full and honeyed. A rich, oily chocolate orange, with dried fruit, chocolate and orange from the cask. It is full and rich, the opulent spirit shining through. A full, sherried finish ends on orange and dark chocolate. This is Dalmore, rich with orange and dark chocolate.
