    An official Dalmore, a 17 year old, 1995, at 57.6%. Dried fruit, orange and a dark chocolate depth fill the glass, with dried fruit, chocolate and orange from the cask. Much of its sherry comes from the aged Oloroso casks of Gonzalez Byass. Its King Alexander III bottling nods to a clan legend of 1263. This is a chocolate and orange Highland single malt.

    Dalmore from the distillery, a 17 year old, from 1995, cask 200, at 57.6%, 650 bottles in all. Dalmore is the Highland malt of the Royal Stag, rich with orange, chocolate and sherry. Its long time master distiller Richard Paterson, known as The Nose, shaped the rich house style.

    It was run through the distillery's unusual flat topped and water jacketed stills, for a full, opulent Highland spirit. Ex-Sherry wood, the Matusalem and Apostoles style, gave a deep marmalade and chocolate richness. At oxidative maturity aldehydes and esters lend dried fruit while ellagitannins add a drying, tannic grip. Dalmore's sherry comes largely from the aged Oloroso casks of Gonzalez Byass. Vanillin and oak lactones from the wood lend vanilla and coconut over the rich malt. An aged Oloroso cask suits the rich spirit, dried fruit and chocolate meeting the oily weight.

    At cask strength 57.6% it is full bodied. Orange, treacle and a warm spice, with dried fruit, chocolate and orange from the cask. A baked fruit and a warm spice lift it. The close is long, fruit over a rich sherry. This is a sherried Highland single malt of real depth.
