    A 30 year old Dalmore from the distillery, at 43.8%. A full bodied malt of marmalade, chocolate and dried fruit. Water comes from the River Averon, drawn from Loch Morie. Dalmore is a Highland distillery on the Cromarty Firth, famous for its sherried malt. This is the rich, sherried Highland malt of Dalmore.

    This official Dalmore, a 30 year old, at 43.8%, 1612 bottles in all. Dalmore is the Highland malt of the Royal Stag, rich with orange, chocolate and sherry. The rich, dried fruit style runs through the core range, from the twelve year old upward.

    Distilled in flat topped wash stills and water jacketed spirit stills on River Averon water, to build a rich, sherry loving character. First fill bourbon gave a fuller vanilla and orange over the rich spirit. Ethereal and old, decades draw the malt to a rich, waxy depth of sotolon, old oak and dried fruit. Vanillin and oak lactones from the wood lend vanilla and coconut over the rich malt. An aged Oloroso cask suits the rich spirit, dried fruit and chocolate meeting the oily weight. The distillery was founded in 1839 by Alexander Matheson on the Cromarty Firth at Alness. Most expressions are finished in aged sherry wood, giving orange, chocolate and treacle.

    Reduced to 43.8%, it is mellow. Baked fruit, coffee and a dark sweetness, with a soft vanilla from the oak. The mouthfeel is heavy, the fruit carried on a rich, malty body. A full, sherried finish ends on orange and dark chocolate. This is one of the Highlands' most opulent single malts.
