Description
This official Dalmore, a 21 year old, at 43.8%. Dalmore sits above the Cromarty Firth, its water jacketed stills building a thick, oily spirit. The distillery was founded in 1839 by Alexander Matheson on the Cromarty Firth at Alness.
It was run through the distillery's unusual flat topped and water jacketed stills, for a heavy, rich make that suits aged sherry wood. An aged Oloroso cask wrapped the rich spirit in dried fruit, chocolate and orange, the Dalmore signature. At oxidative maturity aldehydes and esters lend dried fruit while ellagitannins add a drying, tannic grip. Refill oak lets the full bodied Dalmore character lead, orange and dried fruit beneath. Years in oak round the spirit, the fruit deepening to chocolate, marmalade and treacle. The rich, dried fruit style runs through the core range, from the twelve year old upward.
Reduced to 43.8%, it is mellow. A rich, sherried sweetness, with dried fruit, chocolate and orange from the cask. Beneath it run orange, dark chocolate and dried fruit. A full, sherried finish ends on orange and dark chocolate. This is a chocolate, orange and dried fruit Highland single malt.
