Description
An official release of Dalmore, a 21 year old, at 43%. Dalmore is a rich, chocolate and orange Highland single malt, deeply marked by sherry wood. Most expressions are finished in aged sherry wood, giving orange, chocolate and treacle.
The spirit was distilled for the thick, full bodied spirit Dalmore is known for, building the luscious Dalmore style. Ex-Bourbon casks held it, the oak letting the full bodied, oily character lead. At oxidative maturity aldehydes and esters lend dried fruit while ellagitannins add a drying, tannic grip. The slow loss of the angel's share concentrates the rich, sherried core over the years. Vanillin and oak lactones from the wood lend vanilla and coconut over the rich malt. The rich, dried fruit style runs through the core range, from the twelve year old upward. Its flat topped wash stills and water jacketed spirit stills build a thick, rich, oily spirit.
Bottled at 43%, it is rounded. Orange, treacle and a warm spice, with a soft vanilla from the oak. It is full and rich, the opulent spirit shining through. The finish runs rich, fruity and warm. This is a sherried Highland single malt of real depth.
