    An official Dalmore, a 12 year old, at 43%. Full and sherried, with orange, dried fruit and a warm spice. Much of its sherry comes from the aged Oloroso casks of Gonzalez Byass. Owned by Whyte and Mackay, with a rich house style shaped by Richard Paterson. This is one of the Highlands’ most opulent single malts.

    An official release of Dalmore, a 12 year old, at 43%. Dalmore is a Whyte and Mackay distillery known for its opulent, dried fruit rich style. The distillery stands on the firth near Alness, in the Northern Highlands.

    The spirit was distilled in flat topped wash stills and water jacketed spirit stills on River Averon water, to build a rich, sherry loving character. It rested in ex-Bourbon oak, the wood adding vanilla and a soft honey. Through integration spirit and wood marry, vanillin settling into vanilla as ethyl esters lend a riper orange and dried fruit. The thick spirit shows the sherry clearly, dried fruit and orange over a malty depth. It is owned by Whyte and Mackay, and its King Alexander III bottling nods to the clan legend. The rich, oily spirit takes cask flavour superbly, especially aged sherry wood. Years in oak round the spirit, the fruit deepening to chocolate, marmalade and treacle.

    At 43% it is smooth and honeyed. A rich, sherried sweetness, with a soft vanilla from the oak. A dried fruit and a chocolate depth give it weight. The finish is deep, sherried and dark. This is a rich, full bodied Highland single malt.
