Description
The bottler Glen Fahrn bottled this Dailuaine, a 22 year old, distilled in 1992, from cask 3126, bottled at 53.1%, one of 159 bottles. Dailuaine, founded in 1852, gave Scotch its first pagoda roofed kiln. It passed to DCL and Scottish Malt Distillers in the 1920s and was later modernised.
Run through the distillery's big copper stills, building the heavy Dailuaine style. Ex-Bourbon casks held it, the oak letting the heavy, malty character lead. Through the evaporative decades the spirit concentrates, esters folding into dried fruit, leather and a warm spice. Long ageing turns the fresh fruit towards dried fruit, fig, leather and a warm spice. Vanillin and oak lactones from the wood lend vanilla and coconut over the meaty malt. Most Dailuaine goes quietly into blends, a robust filler kept in part as single malt. The cool Speyside air gives a slow, even maturation, the heavy malt deepening.
Bottled at a cask strength 53.1%, it is rich. Malt, dried fruit and a rich spice, with a soft vanilla from the oak. Dried fruit, malt and a savoury spice fill the middle. The finish is deep, rich and savoury. This is the robust, sherried malt of Carron.
