A 16 year old Dailuaine from the Pitlochry bottler Signatory Vintage, distilled in 2008, from cask 6, bottled at 57%, one of 681 bottles. Dailuaine is the rich, malty Speyside single malt that helped build the Johnnie Walker blends. Single malt Dailuaine is rare as an official bottling, so most come from independents.

The spirit was distilled for the heavy, full bodied spirit Dailuaine is known for, for the rich, full bodied make Dailuaine is known for. An Oloroso hogshead lent fig, raisin and a savoury, nutty depth, the heavy spirit soaking it up. Through oxidative maturity esters concentrate, fruit turning to dried fruit over a rich, malty body. Most Dailuaine goes quietly into blends, a robust filler kept in part as single malt. Years in oak round the spirit, the fruit deepening to dried fruit and a savoury spice. Refill oak lets the robust Dailuaine character lead, malt and dried fruit beneath.

At cask strength 57% it is full bodied. Malt, dried fruit and a rich spice, with dried fruit, fig and walnut from the cask. A baked fruit and a warm spice lift it. A full, malty finish ends on dried fruit and a warm spice. This is the rich, full bodied Speyside malt of Dailuaine.
