Description
This Dailuaine was bottled by the bottler Alistair Walker Whisky Company, a 13 year old, distilled in 2008, from cask 306833, bottled at 56.5%, one of 250 bottles. Dailuaine is a rich, meaty Speyside single malt from the banks of the Spey near Aberlour. Its rich, robust malt has long been a backbone of the Johnnie Walker blends.
The spirit was distilled in large conical necked stills on Bailliemullich Burn water, giving the heavy, meaty spirit at its heart. First fill bourbon gave a fuller vanilla over the robust spirit. Through integration spirit and wood marry, vanillin settling into vanilla as ethyl esters lend a riper orchard fruit over the meaty malt. The slow loss of the angel's share concentrates the rich, malty core over the years. Most of its make goes to blending, with a Flora and Fauna sixteen year old the regular single malt. The clean spirit shows the cask clearly, vanilla and fruit over a rich malt.
At a natural 56.5% it is full and honeyed. A heavy, malty fruitiness, with a soft vanilla from the oak. A dried fruit and a malty depth give it weight. A full, malty finish ends on dried fruit and a warm spice. This is a rich, dried fruit laden Speyside single malt.
