A Dailuaine of a 12 year old chosen by the Huntly bottler Duncan Taylor, distilled in 2009, from cask 10929583,10929593., bottled at 53.5%, one of 337 bottles. Dailuaine is a full bodied Speyside malt of real depth, mostly bottled by independents. Most of its make goes to blending, with a Flora and Fauna sixteen year old the regular single malt.
The spirit was worked through the big stills for a meaty, malty spirit, for a big, full Speyside spirit. A sherry butt held it, the wood lending raisin, fig and walnut to the robust malt. By the integrating teens congeners fade and esters build, the rich, full bodied spirit growing rounder. Maturation in the cool north east keeps the rich spirit balanced over the years. Its rich, robust malt has long been a backbone of the Johnnie Walker blends. The full bodied make rewards a long, patient maturation in good wood.
Bottled at a cask strength 53.5%, it is rich. Malt, dried fruit and a rich spice, with dried fruit, fig and walnut from the cask. Beneath it run dried fruit, malt and a savoury edge. The finish runs meaty, fruity and warm. This is a rich, dried fruit laden Speyside single malt.
