Description
An 11 year old Dailuaine from the bottler Alba Import, distilled in 2013, bottled at 46%. Dailuaine is a robust Speyside distillery at Carron, making a full bodied malt mostly for blends. The distillery was founded in 1852 by William Mackenzie on the banks of the Spey at Carron.
The spirit was worked through the big stills for a meaty, malty spirit, for the rich, full bodied make Dailuaine is known for. Maturation in an Oloroso cask laid dried fruit over the meaty, malty spirit. Integration folds eugenol (clove) and vanillin (vanilla) into the malt, the heavy body fuller and richer. The full bodied make rewards a long, patient maturation in good wood. Years in oak round the spirit, the fruit deepening to dried fruit and a savoury spice. Long ageing turns the fresh fruit towards dried fruit, fig, leather and a warm spice. It passed to DCL and Scottish Malt Distillers in the 1920s and was later modernised.
At 46% it is gentle, sweet and fruity. Baked fruit, fig and a savoury depth, with dried fruit, fig and walnut from the cask. Soft orchard fruit and a rich malt sit behind the cask. A long, full finish carries a savoury depth. This is Dailuaine, a backbone of the great blends.
