Dailuaine 11 Years Old 2010 Cask #308827 (Pendulum Spirits Ltd)

An 11 year old Dailuaine from Pendulum Spirits, distilled in 2010, from cask 308827, bottled at 59.4%, one of 275 bottles. Dailuaine is a heavy, fruity Speyside single malt from near Aberlour. It sits near Aberlour, in the heart of Speyside by the River Spey.

Distilled for the heavy, full bodied spirit Dailuaine is known for, for a big, full Speyside spirit. First fill bourbon gave a fuller vanilla over the robust spirit. By the integrating teens congeners fade and esters build, the rich, full bodied spirit growing rounder. The cool Speyside air gives a slow, even maturation, the heavy malt deepening. In 1889 it became the first distillery to use the pagoda roof, the Doig Ventilator designed by Charles Doig. Water comes from the Bailliemullich Burn, the spirit drawn off three wash and three spirit stills. Refill oak lets the robust Dailuaine character lead, malt and dried fruit beneath.

At its natural 59.4% it is concentrated. Baked fruit, fig and a savoury depth, with a soft vanilla from the oak. The texture is full and rich, the fruit lifted by a meaty malt. The finish is deep, rich and savoury. This is a rich, malty Speyside single malt.
