Dailuaine 10 Years Old 2012 Cask #SC12A (The Firkin Whisky Co. Ltd.)

From the bottler The Firkin Whisky Co. Ltd, a 10 year old Dailuaine, distilled in 2012, from cask SC12A, bottled at 57.8%. Dailuaine is a heavy, fruity Speyside single malt from near Aberlour. The distillery was founded in 1852 by William Mackenzie on the banks of the Spey at Carron.

Made in large copper stills for a rich, robust make, to build a robust, malty, sherry loving character. A Pedro Ximenez cask added raisin, date and a treacle sweetness. By the integrating teens congeners fade and esters build, the rich, full bodied spirit growing rounder. Most Dailuaine goes quietly into blends, a robust filler kept in part as single malt. Maturation in the cool north east keeps the rich spirit balanced over the years. The rich, full bodied spirit takes cask flavour well, especially sherry wood. Refill oak lets the robust Dailuaine character lead, malt and dried fruit beneath.

At a natural 57.8% it is full and honeyed. A rich, full bodied sweetness, with dried fruit, fig and walnut from the cask. A dried fruit and a malty depth give it weight. The finish runs meaty, fruity and warm. This is a full bodied Speyside single malt of real depth.
