Description
The First Cask is exactly what it says, a collector's edition drawn from Connacht's earliest maturing stock, distilled in 2016 in Ballina, Co. Mayo and bottled in 2021 at five years old. The 800 bottle release was an event bottling, a milestone for the distillery on the River Moy.
Maturation combined Kentucky bourbon barrels with Oloroso sherry wood, the bourbon giving vanilla and green apple, the sherry adding raisin and walnut warmth. Bottled at 43%, it is young, bright and cereal fresh in the way of a new distillery's double distilled malt, with the Oloroso rounding the edges and a honeyed finish.
