Cierto Tequila Blanco Private Collection is produced at NOM 1146, La Tequilena in Atotonilco el Alto, the Los Altos highland distillery run by the Fonseca family, where master distiller Enrique Fonseca and his nephew Sergio Mendoza also make Don Fulano, ArteNOM, Fuenteseca and Cimarron. La Tequilena is one of Jalisco's largest agave growers, and its highland fruit gives Cierto a sweeter, more floral foundation than a lowland blanco.
Bottled unaged at 40%, this blanco is the clearest read of that highland agave and the house's hand. It is soft and fresh, leading with bright floral notes and clean agave rather than weight or pepper. The aroma and the palate run together here, an aromatic, delicate style that leans on the highland sweetness of Los Altos and the precision of the distillery rather than barrel or smoke.
